A healthier version of cekodok pisang @ banana dumplings
Made this for breakfast and decided to make it a tad healthier than the usual cekodok pisang.

Ingredients:
2 medium sized, ripe bananas
3-4 tbsp flour
1 tbsp sugar
1 tsp salt
1 tsp baking powder
2 tbsp desiccated coconut ( dry grated coconut )
1 tsp cinnamon powder
1-2 tsp cooking oil ( I used veggie oil )
How to make:
1. Mash the bananas and mix well with sugar and salt followed by 3-4 tbsp of flour and baking powder.
2. Add the desiccated coconut, cinnamon powder and oil and mix well.
3. Preheat oven to 160-180deg.
4. Pour in about 1 tbsp of the mixture into a mini muffin tray and bake until golden brown.
Easy to make, no deep-frying = less fat in one piece of cekodoks. Taste wise, still yummy.
A less-guilt way to start the day!
Last few days didn’t cook anything interesting enough to post on my FP. Kata nak buat carrot cake tapi tak terbuat2 So, ptg tadi lepas penat mengemas TV kat umah, made some cekodokss pisang untuk minum petang.
Ingredients:
3-4 ripe bananas
1 egg
1 teaspoon of baking powder
1 teaspoon of baking soda
flour
sugar
How to make:
1. Mash up the bananas and add in egg,sugar flour,baking powder and baking soda. The consintency and the sweetness of the mixture depends on you. Kalau nak byk rasa pisang then don’t put too much flour, if you want the mixture to be a bit easier to fry, I suggest adding flour until it’s thick enough to be spooned out. ( macam buat cucur biasa )
2. Heat up oil in pan and fry until golden brown.
3. Serve while still warm, with Kopi O’ or Teh O’
